Charro Beans (Frijoles a la Charra)
1lb pinto beans
a handful of cilantro
¼ to ½ of medium onion, chopped
1 medium tomato
4 slices of cooked bacon (*optional)

Cook beans in a crock pot (on slow cook for 8 hours or a few hours on fast mode). Once beans are cooked, add remaining ingredients and cook for additional 30-45 minutes. Add salt and pepper to taste (you may even use seasoning salt). Serve over a bed of Spanish rice or in a bowl. You can even put salsa over beans. Delicioso!
