Calabaza con Pollo (Chick and Squash)
- 3 Chicken (breast or leg quarters)
- 2-3 zucchini's (or yellow squash)
- ½ can of tomato sauce
- 1 can of sweet corn (drained)
- some chopped onions (however much you like onions)
- some chopped cilantro
- some chopped bell pepper (optional)
- ¾ to 1 cube of chicken bullion
- add to taste: cumin, season salt, garlic powder (or chopped garlic), pepper, and (salt if desired).

-Cook/Boil chicken in a pan (de-bone/chop chicken into bitesize pieces);
-in a separate frying pan add approximately 1 1/2 to 2 cups of water, add the cooked chicken, then add chopped (thick) zucchini;
-Add cilantro, bell pepper, chicken bullion, onions and tomato sauce;
-Add to taste: cumin, season salt, garlic powder, pepper and salt(if desired).
-Allow the zucchini to cook with all of the seasonings, then add the can of sweet corn (drained). You cook the corn with the ingredients for 5 minutes or so. (corn just needs to be heated).

" Serve as a soup or you can leave the broth behind and eat the ingredients.

" I usually eat with warm corn tortillas or saltine crackers. Really good with pinto beans as a side dish.
