| BLACK BEAN AND
CORN SALAD
1 can (15 ounces) black beans 2 cup fresh or thawed frozen corn 2 - jalepe?o chile peppers 2 - plum tomatoes 0.5 cup red onion 2 clove garlic 0.25 cup fresh cilantro 2 tablespoon lime juice 1 tablespoon olive oil 2 teaspoon Southwest-style seasoning mix 0.25 teaspoon salt Drain and rinse black
beans and corn. In a large bowl, combine beans, corn, peppers, tomatoes,
onion, garlic, and cilantro. In
a small bowl or measuring cup, mix lime juice, oil, seasoning mix, and
salt. Pour over salad. Cover and refrigerate 1 hour to allow flavors to
develop. |
